when flavor calls

Magazines are great things for restaurants. They need content and we like publicity.
Saveur called today and as typical requests go they asked for a photo, photo credit and a menu listing of what the dish was. Subject was amuse bouche.
It was 1:30 PM and I then asked what the deadline was.
response: 6:00 PM.
Wow. We don't have a PR firm so running home to get a camera, getting everything lined up while getting ready for a busy regular service, coaxing all of my skills as a very amateur photographer... the days are sometimes just not long enough.
